UPDATE - 16. Jan. 2023: Recently I came across a behaviour in Mu4e that did not do what was expected. It turns out Mu4e was not selecting the proper from-address when composing emails, which I did not notice for a long time. The short of it is that the function used to send emails did not take into account the message-send-mail-hook, which is responsible to select the proper from-address.
