This gluten free cookie dough ice cream tastes like the warm memories of summer sunshine and childhood pool days. My absolute favorite flavor of ice cream growing up was cookie dough and I haven't had it since I developed food allergies several years ago. This version is so nostalgic and makes me so happy!
