It is interesting that this recipe gets such varied responses. A few people at The Fresh Loaf have said this recipe makes the best bagels they have ever had. That's truly flattering, since they reference recipes from famous bakers and say mine is better. A few other people have wondered what all the shouting is about. Some of the difference is a matter of taste. If you haven't had a New York style bagel you may not like them and prefer a lighter bagel. But, there is more. Dr. Sugihara’s San Francisco Sourdough Bread | www.sourdoughhome.com
Dr. Sugihara was an amazing person and a great researcher. He was part of the team that identified the organisms that are responsible for San Francisco Sourdough Bread. He was a world recognized authority on sourdough - he went to Italy to consult on the production of Panetone, which is classically made with sourdough. Most […]|
Christmas Pumpernickel This recipe is based on one by Beatrice Ojakangas in her book Great Whole Grain Breads, however it has been converted to sourdough. The bread is flavored with orange rind, and is decorated with a cookie cut in the shape of a star. The conversion is discussed elsewhere, and it was not easy. Pumpernickel purists will complain […]|
When I got into sourdough I was on a religious crusade - ALL recipes I had must be converted to sourdough! Since then I've realized that there ARE good yeasted breads. And that some breads were never intended to be sourdough breads. Many of the benefits of home made breads don't come from using sourdough, […]|
2023-04-20 DAGNABIT! I HATE it when people do this! What do you mean I do it too? Have you ever had beignets? They are a wonderful Louisiana treat! Very much like a donut or sopapilla, but square and with no hole cut out of them. They should be light enough they all but float away […]|

103 - D. Jason Penney's Favorite White Bread This is a pleasant white bread from the RFS bread recipe collection. While it may be D. Jason Penney's favorite white bread, it really isn't mine. Make no mistake about it, it's good, but it isn't that good! This is a bread recipe that offered a lot […]|
102 - Basic Bread A recipe from rec.food.sourdough This is a recipe that we don't recommend, at this time. It makes assumptions that are not obvious about how you'll handle your sourdough starter and is just too vague. We may circle back around to it in the future. Here's the recipe as it was given […]|
Recipes From rec.food.sourdough I remember it like it was just 24 years ago, which is how long it's been. What am I yammering about? 1999 was when I got a good Internet connection and discovered Usenet. About the same time I got into sourdough. Before then the Internet was largely a playground for academics and […]|
101 - "World Bread" A Bread From The rec.food.sourdough Recipes Project This is, appropriately, the first recipe in the rec.food.sourdough recipe list. It is a simple recipe and because it uses an absurdly large amount of starter, it is much more likely to rise than more advanced recipes, even if a beginning sourdough baker makes […]|
